Two Brothers India Farms has launched Kranti Cookbook, a campaign and participatory AI platform created to rediscover, document and celebrate India’s culinary heritage. Developed by Glassbox, a Komerz company, the initiative directly challenges the lasting impact of colonial food engineering : the colonial-era economic policies that prioritised taxation, exports and commercial crops and influenced how food was cultivated, processed and consumed in India. The campaign launched with a provocative film that frames the kitchen as India's last unliberated territory, asking: “India got its freedom. But did our food?” The campaign introduced Kranti Cookbook AI, a living platform that allows anyone to explore pre-colonial cuisine and decolonise their everyday cooking. Trained on classical Indian culinary books such as the Pakadarpana, Manasollasa and more, the AI deconstructs how specific dishes were altered by colonial trade policies and reconstructs their original, pre-colonial preparations.
